Parmesan Roasted Fennel and Potatoes

I’m going to start this off by saying “you’re welcome!” This dish is awesome. My csa basket had a beautiful head of fennel in it this week, and here’s what I did with it!


1 fennel bulb- just the bulb, washed and sliced
5 potatoes- peeled and diced
1/2 red onion- sliced
3 tbsp olive oil
1 tbsp garlic powder
Salt and pepper
1/2 cup parmesan cheese
Preheat the oven to 425*.
Toss fennel, potatoes and onion in oil and spices.
Top with parmesan cheese.
Roast for 30 minutes
